Aiyu (Jelly Fig)|オーギョーゼリー|愛玉


Aiyu, a kind of tree that belongs to the fig family, but only exist in Taiwan because of the symbiotic relations between Aiyu Jelly Fig and its fig wasps. Many people try to cultivate Aiyu in other countries but since Aiyu only grows its fruits with the help of its fig wasps, and the wasps can be only living in the tropical climate of Taiwan, with an organic environment, until now Aiyu is still UNIQUE to Taiwan.


It is a wonder and mystery of nature to see how the two grow together, and last, be sure to get some Aiyu when you are in Taiwan!



Recipe:

Aiyu Seeds 10 g

Mineral Water 500g

Lemon 1 piece

Sugar/Brown Sugar/Honey/Palm Sugar.... by personal preference



Making:

1. Put Aiyu seeds in a cheese cloth(preferred a cloth bag to keep small seeds inside the cloth) and tie up the cloth.

2. Prepare water that contains mineral which helps the pectin to be more solid)

3. Rub out the pectin which is covered on the Aiyu seeds from the cheese cloth, be careful to avoid the seeds come out.

4. The cloth will become sticky on the surface and after 10 mins until you feel the pectin is all out and the cloth is not sticky anymore, let sit for 10 mins(room temperature or chill in fridge)

5. Prepare syrup with lemon juice, sugar, and dilute with water (regular sugar can be replaced with honey, palm sugar or brown sugar).

6. Cut Aiyu jelly into strips and serve with syrup!


 

夏場の台湾でよく見る「愛玉」(オーギョー)は、台湾だけの物だと知ってましたか?イチジク類に属している愛玉は、イチジクバチの力を借りて受精される実の中、天然なペクチンがたっぷり入って100%天然のゼリーができるのです。イチジクバチは、現在台湾の高山や汚染のない土地で、愛玉と一緒に暮らし、両方にとってなくてはならない存在です。


その奥深い大自然に魅了され、私は旅に出た。



愛玉ゼリーのレシピ

愛玉の種(乾燥) 10グラム

ミネラルウォーター 500グラム

レモン 1個

砂糖(グラニュー糖、黒糖、ハチミツいずれも可)



作り方:

1. 愛玉の種を濾し布に入れてくくる(布袋が好まれる)

2. ミネラルウォーターを用意(鉱物質のある水でペクチンがより固まる)

3. 丁寧に濾し布を揉みながら、種が出ないようにペクチンだけ揉み出す

4. 揉んでいくとトロミが出て、およそ10分後にはトロミが出なくなると、放っておく(室内でも冷蔵庫の中でもOK)

5. レモン汁と砂糖でシーロップを作り、水で割る(お好みで)。私はよく黒糖かハチミツで砂糖を代用している

6. 固まった愛玉を細切りにしてシーロップと一緒にいただく。
